With many students and residents looking to buy local and stay environmentally conscious, Syracuse has become a hub for vegetarian and vegan restaurants. Back in July 2010, animal rights organization PETA ranked it No. 5 on their list of veggie-friendly small cities in the United States.

Kale loses its intimidation factor when you bake it into irresistibly crunchy veggie chips.

This winter, I promised myself to expand my vegetable horizons. Kale is a scary vegetable. Raw kale is bitter and has a reputation of being too healthy to be delicious. This baked kale breaks the stereotype. The recipe is easy, and relatively healthy if you can skimp on the cheese (I can't). Just substitute nutritional yeast for the cheese, and you have a great vegan snack.

Almost 40 restaurants, cafes, on campus dining halls and grocery stores provide a substantial amount of meat-free food options that can satisfy any craving.

How vegetarians, vegans and raw foodies live and work in Syracuse.

Until last March, Mariesa “Goji” Narelle rarely set foot in the kitchen. Now she works as a chef for the Vegan Raw Food Café at Green Planet Grocery in Fairmount. She believes she has found her calling.

“I never liked to cook,” she said while leaning over the counter of her small food prep area. “That was my mom’s job.”

The only all-vegan cafe in upstate New York offers an eclectic menu and a home for revolutionary spirits and activists.

At first glance, Strong Hearts Cafe looks like any other eatery, from the tables and chairs to the colorful chalkboard menu to the free wireless Internet. But Strong Hearts is the only 100 percent vegan restaurant in upstate New York, meaning the food has absolutely no animal products such as meat, eggs or dairy.
